Healthy Tuna Pasta Bake



Ingredients

  • 1 tin tuna, 475g

  • 100 g Green beansrr grated

  • 1 pinch Chilli

  • 1 clove Garlic

  • 100 g Green beans, Cut into thirds

  • 1 1/2 tsp Herbs, dried mixed

  • 1 Onion, Diced

  • 500 ml Tomato passata

  • 1/2 tsp Wholegrain mustard

  • 300 g Penne Pasta

  • Salt & Pepper

  • 100 g Sweetcorn (tinned)


Method


  1. Cook the onion, carrot and beans in a large saucepan with enough water to cover them, over low heat, for approx. 10 mins, lid on

  2. Add the garlic and cook for a further minute before adding all the remaining sauce ingredients except the tuna. Make sure the vegetables don't dry out completely in this time or they will burn on the bottom

  3. Cook over a low heat with the lid on, adding water if necessary to retain a sauce that isn't too thick or thin, for approx. 30 minutes or until the vegetables are soft. Stir occasionally to make sure the sauce doesn't stick on the bottom of the pan

  4. Add the tuna to the sauce along with the seasoning and heat through for a couple of minutes

  5. While the sauce is cooking, cook the pasta according to the instructions on the pack

  6. Mix the sauce with the pasta. If your diet allows, place the pasta and sauce in a heat-proof dish, grate cheese on the top and grill for a few minutes until the cheese has melted and started to brown

  7. Serve with vegetables or salad of choice
