Orange, Almond & Olive Oil Cake

This cake in one of my all-time favourites! Light, yummy and great with a cup of tea without the calories!



  • 1 x juice of one large Orange

  • 1/3 cup Grampians pressed Olive Oil

  • 2 cups Almond Meal

  • 1/2 cup rice malt syrup

  • 3 eggs

  • 1 tsp baking powder

  • 1 tsp chia seeds


  • 200g firm ricotta

  • 1tbs honey

  • 1/2 tsp vanilla extract

  • 1/2 tsp natural sweetener

  • Zest of one orange



  1. Oven @ 160C FF & place baking paper in desired cake tin

  2. Mix all wet ingredients in a bowl until combined

  3. Sprinkle baking powder & chia seeds into wet mixture and mix well

  4. Add the rest of the ingredients mix until all combined

  5. Place cake in oven for 45mins or until cooked through

  6. Allow to cool before icing


  1. Combine all icing ingredients in a bowl and mix well (only use 1/2 the orange zest here)

  2. Place icing in fridge for 10mins

  3. Ice cake once cooled and sprinkle left over orange zest on top. YUM!
