Raw Coconut Rough

So, if you haven't figured it out by now, I'm a coconut fanatic! I created this recipe for you to snack on and feel good about it. Healthy & delicious, perfect for lunch boxes as well!

All of these ingredients can be found a Woolworths and/or your health food store


  • 200g cacao butter

  • 2 cups cacao powder

  • 1/2 cup coconut oil

  • 2 1/2 cups unsweetened desiccated coconut

  • 5 tbs monk-fruit sweetener or sweetener of choice

How To Make

  1. Line a square dish of choice with baking paper

  2. Melt Cacao butter, coconut oil & monk-fruit sweetener in a saucepan over a medium heat until completely melted.

  3. Mix desiccated coconut & cacao powder in a mixing bowl

  4. Pour melted ingredients over the dry ingredients and mix well

  5. Put mixture in to a lined square dish and flatten out with spoon

  6. Place coconut rough into the freezer for five mins then it's ready to eat!

  7. Store in fridge
