The Ultimate Vegan Caramel Slice

Okay...When it comes to sweets ya gal LOVES them! But they don't help the waist line! So, I created this little beauty! Crunchy, Chocolaty, Caramel Deliciousness!

Base Layer

1 cup oats

1/2 cup caramelised buckinis

1/4 cup coconut sugar

1/2 tsp cinnamon

1/4 cup shredded coconut

1/4 cup rice malt syrup

Caramel Layer

2 cups medjool dates, pitted

1/2 cup hulled tahini OR peanut butter if tolerated

1/4 cup rice malt syrup

1/2 tsp good-quality salt

1/4 cup coconut milk

Vegan Chocolate Layer

1/4 cup coconut sugar

1/2 cup melted coconut oil

1/4 cup rice malt syrup

1/3 cup raw cacao powder


Base Layer

  1. Mix all dry ingredients in a bowl

  2. Put mixed dry ingredients on grease proof paper on a tray and into the oven for 10mins or until golden brown

  3. Once cooked and cooled blitz in a blender until a rough powder

  4. Blend dry ingredients and rice malt syrup until combined

  5. Press into a small shallow glass container

  6. Refrigerate foe 10mins

Caramel Layer

  1. Put all ingredients into a blender and blend until a smooth pasteLayer caramel sauce on top of the base layer and refrigerate for another 10mins

Vegan Chocolate Layer

  1. Put coconut sugar, coconut oil & rice malt syrup into a sauce pan and heat through until the coconut sugar is dissolved.

  2. Take off heat and whisk through the cacao powder.

  3. Cool then layer over the top of the caramel layer and refrigerate for 1/2 hour

Store in fridge!
